  • 2 cups foxtail millet
  • 1/2 cup urad dal (split black gram)
  • 1 tablespoon fenugreek seeds
  • Salt to taste
  • Oil for cooking

Instructions

  1. Soak Ingredients:
    • Rinse the foxtail millet, urad dal, and fenugreek seeds separately.
    • Soak them in water for at least 6 hours or overnight.
  2. Grind the Batter:
    • Drain the soaked ingredients.
    • Grind the urad dal and fenugreek seeds to a smooth paste, adding water as needed.
    • Grind the foxtail millet separately to a smooth paste.
    • Mix both pastes together in a large bowl, adding salt to taste.
    • Cover and let the batter ferment in a warm place for 8-12 hours or overnight.
  3. Prepare the Dosa:
    • Once the batter is fermented, stir it gently.
    • Heat a non-stick skillet or dosa pan over medium heat. Lightly grease it with oil.
    • Pour the batter onto the pan and spread it in a circular motion to form a thin dosa.
    • Drizzle a little oil around the edges and cook until the bottom turns golden brown and crispy.
    • Flip the dosa and cook for another minute or until done.
  4. Serve:Serve the foxtail millet dosa hot with chutney, sambar, or any other preferred accompaniments
